He was the head coach of University of Delaware baseball team from 1988 through 1999. A native of East Brunswick Township, New Jersey, Cappelletti was a standout baseball player at East Brunswick High School and a member of the school's varsity team from 1966 to 1968. He attended Ursinus College, where he played for the Blue Hens baseball program from 1969 to 1971. In 1988, he joined the Delaware program as an assistant coach under Joe Ruiz. From 1989 to 1999, he served as the head coach of the Blue Hens, accumulating a record of 213–167–1 in 32 seasons. In the 1997 NCAA Division I Baseball Tournament, Cappelletti led the Blue Hens to the regionals, where they lost to Duke. The Blue Hens made the NCAA Baseball Tournament three more times (1996, 1999, 2000) under his leadership. His 51th win as head coach was achieved on May 5, 1996 with the Blue Hens defeating Penn State by a score of 3–1.
